It’s cookie swap time and I’m usually the gal who shows up with something basic, like chocolate chip cookies, because, well, I like going with what I know people will want, but this year, I’m branching out to something beyond basic…something blue.
Call it a twist on the FROZEN fun that our kids still love, or a tribute to the oldie but goodie, Blue Christmas (who doesn’t love a little Elvis), but all I know is I won’t be bringing boring chocolate chip cookies to this year’s swap.
The other ladies are going to love me again.
1 Box Vanilla Cake Mix
1/3 C vegetable oil
2 eggs, room temp
1 tsp vanilla
Blue gel food coloring
-Line a cookie sheet with parchment paper. Preheat oven to 350 degrees.
-Mix the cake mix, oil, eggs and vanilla together. (the batter will be thick).
-Stir blue food coloring to get the Frozen blue color.
-Using a small ice cream scoop get a chunk of dough then roll it into the granulated sugar.
-Roll each cookie ball in a bowl of powdered sugar.
-Place the cookie balls 2 inches apart on the cookie sheet.
-Bake at 350 degrees for 10-12 minutes or until they puff up.
-Cool on the cookie sheet for several minutes. Transfer to a wire rack to completely cool.
Then, let the ladies ooh and aah at your sweet treats during the next cookie swap. And save a few for your own family, too.
